This chicken dish is a great one-pot meal for the whole family, featuring lots of fresh herbs, vegetables and just a little bit of Cajun spices from the deep south of the USA.

Ingredients
250g long grain rice
Fresh thyme
1 onion
3 celery sticks
1 red pepper
175g closed cup mushrooms
Vegetable oil
2tsp Cajun seasoning
Half-a teaspoon chilli powder
400g cooked skinless chicken breast fillet
4 tomatoes
Method
1. Put the long grain rice into the saucepan and cover with plenty of boiling water from the kettle. Add three sprigs of thyme; then cover and cook over a medium heat for 12 minutes, or according to the packet instructions, until tender.

Hide Ad2. Meanwhile, use a food processor to slice the onion, the celery sticks, the red pepper and the mushrooms. Heat a teaspoon of vegetable oil in a frying pan and tip in the vegetables from the food processor. Stir-fry them for 4-5 minutes.
3. Drain the rice in a colander; then add it to the frying pan and add two teaspoons of Cajun seasoning and half-a-teaspoon chilli powder. Chop 400g cooked, skinless chicken breast fillet and the four tomatoes and add them to the pan. Cook for 2-3 more minutes, stirring constantly until heated through.
4. Check the seasoning, adding an extra pinch of Cajun seasoning or chilli powder, if needed. Spoon on to four warmed plates and serve at once, garnished with a few extra thyme sprigs.
